Cheddar soups are often heavy and thick. This one is surprisingly light, but that's because it doesn't have a huge amount of cheese. Be sure to whisk constantly and do not boil when reheating, or the soup might break.
SERVES: 4
PREP TIME: 15 Minutes
COOK TIME: 20 Minutes
Ingredients

1/4 cup butter or chicken fat
1/2 cup flour
27 ounces chicken broth
2 carrots, peeled and cut into julienne strips
1 onion, finely chopped
1/2 cup chopped leeks
1 cup white wine
1 teaspoon Worcestershire sauce
2 cups grated Cheddar Cheese
cayenne pepper to taste
salt to taste
1/2 cup heavy cream
chopped chives, for garnish
add grated cheese for garnish, optional

Directions
Step 1  Step 1:
In heavy bottomed pot, heat chicken fat or butter until melted, then add onion and leeks. Saute until tender, then sprinkle in flour and stir until it is mixed together. Cook for 3-4 minutes, then whisk in broth and wine until smooth. Add carrots, then bring to a boil and simmer 15-20 minutes longer, or until soup thickens.
 
Step 2  Step 2:
Remove from heat and stir in cheddar, Worcestershire, cayenne, and salt. Stir in cream. Heat until just hot, do not boil. Serve with chives for garnish
